How to make Chocolate and Almond Mousse - Chocolate mousse is well loved by most but when almonds are added to it the taste is further enhanced.

Ingredients for Chocolate and Almond Mousse Recipe

  • Dark chocolate chopped 1 cup

  • Almonds blanched 1 cup

  • Egg yolks 3

  • Castor sugar (caster sugar) 2½ teaspoons

  • Milk ? cup

  • Fresh cream ¾ cup

  • Cocoa powder for garnishing

  • Chocolate sticks for garnishing

Method

Step 1

Cook the egg yolks and caster sugar in a double boiler, stirring, till thick or till it coats the back of the ladle. Remove from the heat.

Step 2

Add the milk to the egg mixture and mix well. Remove from heat and set aside.

Step 3

Place the chopped chocolate in a deep bowl and pour the milk-egg mixture over it and mix till the chocolate melts.

Step 4

Beat the fresh cream lightly and fold into the chocolate mixture.

Step 5

Grind ¾th almonds coarsely and sliver the remaining.

Step 6

Add ground almonds to chocolate mixture and mix well. Place the bowl in the refrigerator for 10-15 minutes or till it thickens.

Step 7

Place chocolate-almond mixture into individual glasses and refrigerate till set.

Step 8

Sprinkle cocoa powder and serve chilled garnished with almond slivers and chocolate sticks.
